Back in 1994, the book trade was very different to how it is today. Amazon was unheard-of, and a supermarket was the place to buy baked beans and bog roll, not the latest bestselling novel or celebrity autobiography. Sainsbury’s and other supermarkets published their own brands of cookbook from time to time, but no one headed there, as they can now, in expectation of being able to snare the latest Delia Smith or Nigel Slater at 50 or 75 per cent off the cover price. But while the publishing industry seems intent on devaluing its brand-new releases, so that the public perceives them as only slightly more valuable than plain paper stationery, the market for well-written, well-kept secondhand cookbooks is steadily rising.

I’ve no intention of selling my copy of ‘Roast Chicken…’, but, like those curious punters on ‘Antiques Roadshow’, I find myself compelled to consult secondhand dealer Jonathan Tootell. His company, Gardener & Cook, which specialises in books on food and gardening, has just opened a concession on the lower-ground floor of Foyles on Charing Cross Road. Not only has he sold two ‘Roast Chicken…’s for well over 100 quid each recently, he’s found increasing demand for the book Simon Hopkinson has subsequently revealed is his favourite, American writer Richard Olney’s ‘French Menu Cookbook’. But even given the nature of media hype a secondhand copy of this work will set you back just £30, even if it is in good condition.

Tootell first began collecting cookbooks around 15 years ago and has been running Gardener & Cook for almost two years. The shelves at Foyles hold only about ten per cent of his stock, so it’s worth enquiring, as many chefs do, if there is something you are looking for.

Twentieth-century cookbooks make up the bulk of the food range, as Tootell knows most about that field, but there are also antiquarian titles (many more in the gardening section), and books discussing food-related social history, restaurants and agriculture. His special favourite is an American book called ‘Manifold Destiny: The One! The Only! Guide to Cooking on Your Car Engine!’ Yes, that is actually while driving.

Naturally when a much-loved family reference finally gives up the ghost, people want a clean replacement, but they’re not easy to find. Victorian favourite ‘Mrs Beeton’s Book of Household Management’ is readily available, but which edition, what condition and at what price? Tootell has various copies: a first edition for £900 (‘but it’s not a great copy; a really good one would be about £1,500’), a second edition for £350 or so, and a 1968 leather-bound facsimile of the first edition for £100. Or, one could argue, you don’t need to buy a copy at all.

As with all aspects of retail, the internet is changing the way people buy secondhand books. Whether you’re looking to sell or buy, there are potential pitfalls. The web’s inflated some prices, says Tootell, because it’s made people more aware of the scarcity of some cookbooks. Titles that a dealer or expert buyer would pay a fiver for in secondhand shops not too long ago are now advertised at ‘ridiculous’ rates. On the other hand, the fact that a book is offered at a high price doesn’t necessarily mean it will sell for that, and – as Tootell explains – the next person to come along with a copy will try to undercut it.

Since Marco Pierre White’s appearance on ‘Hell’s Kitchen’ this year, prices for his books have gone a bit bonkers. ‘White Heat’ – an iconic work the world over, in which Bob Carlos Clarke’s photographs of Marco and his brigade in the kitchen at Harvey’s are as important as the recipes – has always been a bit of a collectors’ item, and a signed hardback first edition now costs £200-£250. Suddenly, too, ‘The Mirabelle Cookbook’ has been advertised on eBay for £100-£150. ‘Four months ago I sold one here for £50 quite happily,’ says Tootell, ‘but then there was the TV series.’

And, he adds, if you’re looking for something to use in the home kitchen, Marco Pierre White’s ‘Canteen Cuisine’ (from the former Chelsea Harbour restaurant co-owned by actor Michael Caine) has far more accessible recipes than the tricky Michelin-star-calibre dishes of ‘White Heat’. This kind of advice shows that Tootell is more enthusiast than dealer. When asked what titles would make a great wedding or special birthday present, he doesn’t just roll off a list of impressive names at premium prices, but wants to know what type of cook the recipient is, whether they like to read about food or would prefer reliable recipes for the kitchen. He wants the books to be used and enjoyed. ‘We select books partly because they’re rare and valuable,’ he says, ‘and partly because they’re just great books.’ It’s proof that, just as ‘Antiques Roadshow’ and all those boot-sale programmes on daytime TV advise, the most satisfying things to collect and invest in are the things you love.
